Yes, you read that right. Just 3 simple ingredients – cashews, almonds and Medjool dates – combine to create the crust of this apple pie.
The previous recipe called for cashews and dates, and the crust was certainly delicious but very soft and sticky. I really like the addition of almonds because it adds a little texture. The crust is still nice and soft, but not too thin. The taste testers agree, so you’ll find this update in the recipe below.
Start by soaking raw dates in hot water for about 10 minutes, then cut them in half before preparing the nuts. Why water dates early? They will mix more easily with the seeds.

Using a spoon or the back of a measuring cup, press the crust into a 9-inch tart pan, making sure to cover the bottom and sides. If you don’t have a cake pan, use a 9-inch round cake pan or a 9-inch cake pan.
Correct. For a nut-free crust, try the shortbread on this lemon blueberry tart. Increase the cooking time to 25 minutes. Or try the cookie crust of this fresh peach pie or the graham cracker crust of this peanut butter cup pie. Follow the cooking instructions for these crusts. Cool completely before adding yogurt and fruit.
To make the Greek yogurt filling, simply sprinkle your favorite flavor into the crust. Quite literally – no other ingredients or fillers are needed. (This recipe seems to get simpler as we go, doesn’t it?!) I usually use vanilla Greek yogurt because it goes well with so many fruits. Strawberry yogurt is great with sliced strawberries on top. Plain Greek yogurt is not very sweet.
You will need 1 cup of Greek yogurt to fill the no-bread crust. If you buy one of the larger containers at the store, use the rest in a whole bowl or in these Lemon Greek Yogurt Bars.
